It has been a long time since I’ve posted. A lot has happened since July 2016. I’ve moved, graduated from a master’s program changed roles at my job and did some traveling. Things are starting to settle down now. Which I am very happy about but also I like having things to do.
I have that cookbook from the Kitchn which I thought I was going to love but my house has very picky tastes and it rare that I make anything from this book outside of eggs and sweets! However, there was a tip on roasting veggies lesson 27. The trick is high heat. It was a simple lesson but it really elevated my veggies which would turn out too brown or too mushy. We usually have leftovers and I’ll add some to a salad or in a breakfast bowl later in the week. I really just love sweet potatoes.
Then for the fish I just pick up the pack from Trader Joe’s and defrost it almost all the way. Tilapia is so flimsy so, I’m okay with it not being fully defrosted. I melt a
bit lot of butter in a cast iron skillet. I pad dry the fish and put the lemon pepper seasoning on it and put it in the pan. I grate some fresh garlic on top and let it get a good sear. I baste some butter over the top and place it in the oven to finish cooking.
While all that is happening I might throw one of those steam fresh veggies in the microwave or rice from the rice cooker. I like it easy, quick and yummy.
